New canning method in the United Kingdom

The United Kingdom has adopted a new method of canning that uses current to preserve food. Ordinary canned foods are heated with hot water or steam to preserve foods, and a new method is to heat foods with electric resistance generated when electric current passes through the foods. When heating food with hot water or steam, the effective use of energy is less than 50%, because when watering or generating steam, more than 50% of electric energy is consumed in energy conversion.

The new method is designed to: Prepare and preserve foods that can be made into canned foods, feed the tubes with electrodes at both ends, and energize them. The food is heated to 140°C. In order to not boil the liquid in the food in the pipeline, the heating process is performed under high pressure. This method cannot be used for all foods, such as foods with high fat content. However, it is very suitable for canned meat, vegetables, canned crabs, canned beans, canned mushrooms, soups, and juices. The advantages of this method are that in addition to energy saving, the canning process can be shortened, and more nutrients in the food can be preserved.
