Mexican Chili Tortillas Recipe

Now that the twins are two years old, I’m thrilled to reintroduce some meals we used to love before becoming parents. Cooking chili has always been one of my favorites because it’s simple and quick to prepare, but I was hesitant to serve it to the girls until they were older due to its messiness and spicy nature. However, now seemed like the perfect time to try something new while still keeping things manageable.

This dish turned out to be fantastic when preparing it as part of the "12 Dishes" series. While the kids didn’t help with making the chili sauce, they thoroughly enjoyed assembling their own tortillas. Their excitement was palpable, and by the end of the meal, every plate was empty—mission accomplished!

Ingredients

  • 1 large onion
  • 1 red pepper
  • 2 garlic cloves
  • 1 teaspoon mild chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 500g lean ground beef
  • 1 beef stock cube
  • 1 can of chopped tomatoes
  • 1 teaspoon sugar
  • 2 tablespoons tomato purée
  • 1 can of kidney beans

To Serve:

  • Plain boiled long-grain rice
  • Flour tortillas
  • Lettuce
  • Soured cream, guacamole, salsa
  • Grated cheese

How to Prepare:

  • Sauté the onion until golden, then add the red pepper along with the garlic and spices. Brown the ground beef in the mixture.
  • Incorporate the beef stock mixed with 300ml of water, along with the canned tomatoes, tomato purée, and sugar. Stir well into the meat mixture.
  • Let it simmer gently for approximately 20 minutes.
  • Add the kidney beans and continue to simmer for another ten minutes.
  • Serve alongside rice, flour tortillas, a side of salad, and various sauces.

I encouraged the twins to help assemble their own tortilla wraps. Each child had a small bowl filled with different components of the meal, allowing them to choose what they wanted. This interactive approach made the entire experience more enjoyable and educational for them.

The girls absolutely adored the squirt bottles of Mexican sauces I purchased. These added an element of fun and convenience to the process, though I must admit, the taste wasn’t quite as authentic as homemade or store-bought versions. Rolling the tortillas proved slightly challenging for the two-year-olds, but Molly, being five, managed it independently. Mini tortillas were a stroke of genius; they were just the right size for little hands to grasp easily.

Overall, this meal was a huge hit. It was both fun and surprisingly less messy than expected. Interestingly, the twins also loved the lettuce—a delightful surprise!

Finishing off with a piñata brought immense joy to our family. During the holidays, we all had a blast breaking it open and discovering the candies hidden inside. Though the actual hitting part initially scared them, they quickly embraced the excitement of finding treats scattered around.

We began our journey much like Phileas Fogg, starting in London, UK, followed by Stockholm, Sweden, then Moscow in Russia. From there, we traveled via New Delhi, India, to reach Tokyo, Japan. A brief stopover in Papeete, the capital of French Polynesia, brought us here—to Mexico City!
